- DOUGH: Mix the flour, salt, and oil. Pour in 3/4 of the water and knead. Whatever extra water you need, dip your hand into the water and pat onto the dough. This dough can make 7-8 paratha.
- DOUGH: Once you've separated your dough, brush oil onto a plate and place the balls there. Use a brush to spread the oil. Cover and leave it aside, let it soak for 12 hours. You can periodically check the balls to see if they're moist and brush oil on them. No more than 2 tbsp of oil should be needed.
- GARLIC BUTTER: In a food processor, throw in your garlic, green onions, coriander, and chili until finely minced. Incorporate into the butter and mayo.
- EGG FILLING: Mix your chopped onion, chilies, and pepper with three eggs.

- EGG ROTI: Much harder than a simple paratha but so very worth it. Place your rolled out paratha on the frying pan, ladle out a scoop of your egg filling and pour it at the center. It's then a race against time to fold the roti into a square. It's fine if it's a little messy. 😋
