Steps to make Bengali Potato Omelette Curry:
  1. In a mixing bowl crack two eggs add 1 tsp chopped onion 1 chopped green chillies and salt. Whisk well until you make a batter for Omelette.
  2. Heat oil in a pan when the oil start to smoke pour the egg batter into the pan and reduce the flame to low.cook it for some time until the bottom side is done. Then roll it carefully with the help of spatula.cook for few to seal the Omelette nicely.
  3. Transfer the Omelette carefully on a plate. Repeat the process thrice and make rest of four Omelette. Cut the Omelette into half pieces and keep it aside.
  4. Now heat oil add boiled potatoes. Fry them till light golden brown and keep it aside.
  5. Add oil into the same pan, once the oil is hot add 1 tsp cumin seeds, bay leaf cinnamon sticks green cardamom, cloves and let them crackle. Add chopped onion ginger garlic paste green chillies and saute for 2-3 minutes till it become translucent and the raw smell goes away
  6. Add chopped tomatoes and stir fry on medium.
  7. Add dry spices one by one and cook it till the raw smell goes away and the tomatoes have become soft.
  8. Add the fried potatoes and coat them with the spices.sprinkle sugar. Stir fry for 1 min and then add warm water. You need to add as much water as if required to sink the potatoes in the gravy. It also depends on how much gravy you like.
  9. Boil for 5 minutes on high flame. Add the sliced of eggs pieces into the gravy. Then add garam masala powder salt to taste a few slit green chillies and coriander leaves. And cook for 3-4 min. Turn off the flame.
  10. Serve Omelette Curry with steamed rice.
