- Wash and chop vegetables in small cubes. I used red and green bell peppers, tamatoes and green chillies.
- Also chop onion and coriander leaves.
- Break 2 eggs to a mixing bowl and beat for 3-4 minutes to become the mixture foamy.
- Add in chopped vegetables except onion and green chillies.
- Now add all the spices like red chilli powder, termaric powder, garam masala powder and salt.
- Mix well and then add in 1 table spoon of milk. Mix again.
- Heat a flat non-stick pan with 1 tablespoon of butter.
- Add in chopped onion and green chillies and saute for a minute or until onion becomes soft and flavourful.
- Next pour in the egg mixture and swirl the pan to spread the mixture evenly. Try to make a thin layer.
- Cover and cook in low heat until the mixture sets and changes colour.
- Flip the omelette carefully and cook for a couple of mitures more to cook evenly from both sides. Dont overcook. Omelette tastes best if it is little soft from inside.
- Now flip again and sprinkle some cheese of your choice on one part of the omelette.
- Now cover the cheese side with other half of the omelette and transfer carefully to serving plate.
- In the same pan heat 1 teaspoon of butter and saute cooked and sliced potato wedges, green peas an sweet corn until light golden brown.
- Sprinkle some salt and chat masala. Transfer to the omellete dish.
- Garnish with some chopped coriander, chop bell peppers.Serve immediately.
