- Get 300 g potatoes (peeled weight)
- Take Sachet yeast
- Prepare 1 tsp sugar

- Prepare 300 g bread flour (or 300g plain flour with 1 tsp gluten)
Instructions to make Potato Bread:
- Peel and chop the potatoes, weigh to ensure you have 300g, and then boil until tender-but-not-soggy. Drain the potatoes and return them to the hot pan to dry.
- Add the yeast and sugar to 1/3 of a cup of lukewarm water (80ml) and leave until the yeast is active - 5-10 minutes. While you wait, add the flour, onion powder and salt to a bowl and mix together.
- Place the dried-off potatoes into a stand mixer and mash them with the oil, using the flat beater (K-beater).
- Switch to the dough hook, and add the active yeast mixture. Start adding the dry ingredients, about a quarter-cup at a time, with the mixer on a low speed. Keep kneading until the dough is smooth and springy. (It may take a little longer than "normal" bread.)
- Turn out of the bowl. Clean and lightly oil the bowl and then put the dough back in, cover and leave in a warm spot to rise for an hour.
- Knock back the dough. Shape it into a loaf and place it into a lightly-oiled loaf tin. Leave to rise for another 30 minutes.
- Preheat the oven to 200C and bake for 30-35 minutes.
