  1. In the bowl of a stand mixer place water, yeast 1 cup of the flour, sugar, salt, 1 tbsp oil and milk powder. Combine to resemble a smooth batter. Set aside for 15 minutes.
  2. Add in 1 cup remaining flour and 2 tbsp remaining oil. Add more flour as needed to form a smooth dough that is not sticky. Place formed dough in a well-oiled bowl and cover with clingwrap. Set aside in a warm spot to rise for an hour.
  3. Mix all filling ingredients (soft butter, cinnamon powder, sugar and pecans) into a paste.
  4. Remove cling wrap from the dough. Punch down the dough and roll out on a floured surface into a large rectangle about 4mm thickness. Spread filling mixture onto rectangle, leaving a 1cm border all around. Roll up the dough swiss roll style and pinch the seam closed.
  5. Slice the swiss roll down the centre along the length and twist together, cut sides up. Pinch the end closed. Place in a greased loaf tin cover with cling wrap again and leave aside for 30mins.
  6. Bake in a preheated oven at 180°C for 18-20 mins until golden brown on the top. Do not allow to dry out.
