  1. Beef: Melt butter in saucepan, add meat. Brown well, remove with slotted spoon, set aside. - Add onions to saucepan, saute until tender. Return meat to saucepan. Add orange rind and juice. Mix well. Stir in sugar, cayenne pepper and seasoning. Cover and simmer over medium heat, 1 - 1.5hr or until meat is cooked. Add little water during cooking if necessary. When cooked stir in cashew nuts and thicken with cornflour paste.
  2. Rice: In a saucepan heat butter. Add spring onions and curry powder. Saute two minutes. Add rice and coconut, toss well over heat. Season to taste. Add red pepper, heat through. Spoon on to warmed serving plate. Top with beef. - Optional: garnish with orange segments and rind.
