- Prepare 125 ml desiccated coconut

- In a bowl mix the oats, desiccated coconut, cake flour, ground cinnamon, salt, chopped cranberries, chopped apricots and chopped nuts.
- In a microwaveable bowl add the honey, coconut oil and butter. Heat for 30 seconds or until melted.
- Preheat the oven to 160°C. Add the honey mixture to the oats mixture. Add the vanilla essence and mix.
- Line a baking sheet with baking paper. Spread the mixture into the pan. Press the mixture down with a wooden spoon.
- Bake for 10-15 minutes or until golden.
- Take out of oven. Let cool completely. Cut into bars.
