  1. Blanch washed spinach in little boiling water for 1 minute with 1/2 tsp sugar and pinch of salt.Strain and reserve stock.Immediately shock with ice water to stop further cooking and retain the green colour of leaves.Drain and blend to a puree in a mixer.Blanch cauliflower also for 2 minutes.Drain and set aside.
  2. Make a paste of few roasted cashewnuts with sesame seeds, 1 chopped tomato and curd.Heat oil in a wok or pan and fry cauliflower till brown spots appear.Set aside.Remove excess oil.
  3. Sprinkle half crushed whole garam masala.When they splutter, add grated ginger, minced garlic and cumin.Add chopped onion and fry till light brown.Add the ground wet paste, tomato puree, dry masalas and salt to taste and fry.Add fried cauliflower and reserved stock and simmer for 5 minutes till cauliflower is cooked.
  4. Now add the spinach puree, malai or fresh cream and toss well till it is well blended with cauliflower.Sprinkle 1 tsp ghee or clarified butter and toss.Garnish with few roasted cashewnuts and serve hot as a side dish with jeera rice, roti,puri or any Indian flatbread in lunch or dinner.
