- Get 3 tsp oil
- Take 1 tsp cumin seeds
- Make ready 1 tbsp finely chopped garlic
- Take 2 small onions diced
- Make ready 1 cup corn kernels either frozen or fresh
- Make ready 1 tbsp Coriander powder
- Take 1/2 tsp black pepper powder
- Make ready 1/4 tsp turmeric powder
- Make ready 1/4 tsp peprica powder Or red chilli Powder
- Make ready Handful chopped Coriander leaves
- Take as needed Water
- Prepare As required Blanched and grinded spinach
- Take As required Cooked rice
- Prepare For the creamy mix veg gravy
- Prepare 2 tbsp butter
- Make ready 1 tsp chopped garlic
- Make ready 1 medium Chopped onion
- Take 1 tbsp all-purpose flour
- Prepare 1/2 tsp red chilli flakes
- Get 1/2 tsp red chilli powder
- Make ready 1 cup blanched mix veg
- Take 50-60 grams paneer cubes
- Prepare 1/2 tsp black pepper powder
- Take 3 cubes spread cheese or any cheese you have
- Prepare 1 cup milk
Steps to make Spinach Corn Rice with Creamy Mix Veg Gravy:
- Firstly clean and wash the spinach leaves then boil water in a wok when start boiling add the spinach leaves and cook for 2 minutes then immediately drain all the water and wash it with cold water to stop further cooking and by this the colour of the spinach will also retain. When all the water dries out then grind it with ginger and green chillies to make a fine paste.
- Clean and wash the rice and cook only 80% with salt and cloves. Once done with 80% drain out all the excess water. Below are all the ingredients for the corn spinach rice. I'm using frozen corn kernels you can use fresh also.
- In a big wok heat up oil followed by butter then add the cumin seeds when starts spluttering add the chopped garlic and saute for 2 minutes then add the chopped onions and saute till translucent. Now add red chilli Powder, turmeric powder, coriander powder and black pepper powder and mix very well.
- Once well cooked and oil oozes out then add the corns and cook it in the spice mix for 2-3 minutes then add the spinach puree and cook for 2 minutes then add the cooked rice and mix very well. Add some Chopped Coriander leaves and mix well.
- Once everything is well coated the rice and the gravy then sprinkle some water on it. This is just to make steam in the rice to cook it well. Then cover it and cook for 3-4 minutes and the spinach and corn rice is done.
- For the gravy you can use any veggies of your choice. You can use fresh vegetables or frozen also. If using fresh vegetables then blanch it and if using frozen then no need it blanch. Now heat up butter in a pan then add garlic to it and saute for 2 minutes then add chopped onions and again saute till translucent then add salt, red chilli Powder and red chilli flakes and black pepper powder.
- Mix them very well then add all-purpose flour and cook it till the rawness goes away. The ratio of butter and flour must be equal. Once cook add the mix veg and saute well. Cook it for 3-4 minutes then add the paneer cubes and mix well again cook for 3-4 minutes. You can use mushroom also in place of paneer but in that case first saute the mushroom then add the mix veg.
- Now add milk slowly and gradually and stir then add the cheese and mix very well. You can use any type of cheese even the cheese powder also. Once start boiling add some Chopped Coriander leaves and cook it for 2 minutes and off goes the flame.
- Now our exotic creamy mix veg gravy is ready to be served. So served this gravy with both spinach and corn rice and chapati or enjoy it only with the spicy rice.
