Mix chickpea flour with suji or semolina,curd,salt,baking powder,carom seeds and other masalas.Add water to make a thick batter.Add all chopped and grated ingredients and mix well.Add squeezed out water from lauki to the batter.Adjust water now to make a vegetarian omelette like consistency. Cover and set aside for 10 minutes.
  2. Heat 1/2 tsp oil in a tadka pan and sprinkle mustard,cumin and when it splutters,add it to the batter alongwith hing.Heat a non-stick tawa or frying pan smearing 1 tsp oil. Pour a ladleful of batter and spread it.Fry on low heat till underside is well browned and crispy.Flip and cook the other side.
