The ingredients needed to make Carrot cake:
  1. Make ready flour
  2. Prepare peeled and grated carrots
  3. Make ready vegetable oil (I used coconut)
  4. Prepare baking powder
  5. Make ready baking soda
  6. Make ready cinnamon
  7. Make ready granulated sugar
  8. Get brown sugar
  9. Make ready eggs
  10. Prepare vanilla
  11. Take Optional 1 cup coarsely chopped nuts (you add your fav)

Instructions to make Carrot cake:
  1. Preheat your oven to 350°F. Grease a baking tin and flour it abit.
  2. In bowl, whisk flour, baking powder & soda, cinnamon and salt.
  3. In another bowl, whisk the oil, both sugars, vanilla once combined start mixing in the eggs one by one. Once it's well mixed, incorporate the dry ingredients in 3 parts with a wooden spoon.
  4. Once the batter is smooth fold in your Carrots. I opted not to use nuts.
  5. Place the batter into the baking tin and bake for 50mins-1hr or until springy to the touch and a toothpick at the centre comes out clean.
