  1. Beat eggs and castor sugar together until light and creamy. Add oil and beat well.
  2. Sift flour, baking powder, bicarb, salt and spices together. Add to creamed mixture and mix well.
  3. Fold in grated carrots and nuts. Spoon mixture into a greased 23cm loose-bottom round cake pan or two greased 20cm round cake pans. A muffin tray may also be used for variety.
  4. Bake in a preheated oven at 180°C for about 40 mins. Leave in the pan for a few mins before turning out onto a wire rack to cool completely.
  5. Icing: Combine all ingredients and mix until smooth. Spread icing onto cake.
